Today’s Meal Prep Tip: Marinate Your Meat

Even if you don’t like the idea of cooking all your food at once and splitting into tupperware for the rest of the week, you can easily prep your meats for the week with flavorful marinades. This allows flavor to build throughout the week and makes for a quick and easy dump-and-go crock pot meal or sheet pan dinner.

The Secret Sauce of Meal Prepping

I love when a recipe is loaded with flavor and super simple to bring together. Being that I have a large family, we are constantly on the lookout for large meals that are not going to take me all day to prepare. But how do you get maximum flavor from minimal effort?

My secret sauce is the condiment aisle. Yes I prefer to make my own everything. We’re a homesteading family and I want to know what I’m feeding my kids. I want to be able to read the label and not need a science degree to figure out if it’s healthy or not.

But sometimes taking a shortcut with condiments like infused oils or cultural spices that aren’t your own, is the key to a meal that will have everyone excited. My favorite sections in the grocery store are the Mexican and Asian sections, specifically their condiments and spices. Consider how they have been packaged for an extended period of time. That means flavor has really had a chance to develop. In most cases that means you’ll save money because you won’t have to use 10 different ingredients, just one that has been expertly prepared.

Ingredients Needed

  • Chicken Breasts: This is the main protein to our sheet pan dinner. It is filling, healthy, and bland enough to take on whatever flavor profile you add to it.
  • Veggies: You can change up the veggie choices here, but sweet potatoes instead of rice is the healthy alternative and broccoli is a very common, crunchy companion to many Asian dishes.
  • Momofuku: This is a must-have! I would put this stuff on everything! Grab both the Black Truffle Chili Crunch and the Hot Honey Chili Crunch. This is what we’re using in the marinade and in the Hot Honey Mayo Drizzle.
  • Other: You’ll also need sesame oil, rice vinegar, Japanese mayo, salt, pepper, soy sauce, and a carrier oil such as peanut oil or avocado oil. I suggest one of these two oils because of their high smoke point. We will be cooking this sheet pan dinner at 425F and don’t want to smoke out the house.

Recipe Variations

  • Create a batch of simple chili oil yourself by infusing a dark jar of avocado or olive oil with crushed red pepper flakes and Szechuan peppercorns. For a more authentic DIY version check out The Woks of Life.
  • Note that this recipe is photographed using 2 sweet potatoes and 2 heads of broccoli. This sheet pan is a x by x inch. I could have easily doubled the sweet potatoes and broccoli to the dinner given the amount of chicken I had. Keep that in mind if you’re wanting everyone to have a bigger helping of vegetables.
  • Serve this over rice to get even more from the dinner or alongside a simple ramen cooked in chicken broth.

Bring the HEAT – or not.

Easily adjust the level by adding a carrier oil to the marinade, or adding additional red pepper flakes. Adding a carrier oil like I did, tones down the heat intensity as it gets spread more throughout the chicken. Increase the heat by adding additional pepper flakes or Szechuan pepper to the marinade. The recipe created here had heat to it but not so hot that my kids wouldn’t eat it. So take that for what it is!

  1. Start by adding the chicken breasts and the marinade ingredients to a large Ziploc bag. Remove all the air and slosh around. Place in the refrigerator for at least 20 minutes or overnight.
  2. Prep the vegetables by peeling and dicing into their own bowls. Toss in their own oil and seasonings. Cook the sweet potato first on a parchment lined sheet pan.
  3. Add the chicken and broccoli to the sheet pan and finish cooking.
  4. Make the Hot Honey Mayo while waiting for the chicken to cook.
  5. Optionally: You can remove the vegetables and broil the chicken at the end for a bit of added texture.

How to store and love your leftovers

  • Refrigerate: Pack leftovers in an airtight container for up to 5 days. Store the hot honey mayo separately to add to the leftovers after they’ve been reheated.
  • Freeze: Once the dish is completely cooled, transfer to an airtight container for 3-4 months. Likewise, the marinated raw chicken in a Ziploc bag can be frozen for 3-months.
  • Reheat: Frozen marinated raw chicken can be thawed in the refrigerator overnight or in a sink of cool water for about an hour. Frozen pre-made sheet pan meals should thaw in the refrigerator overnight. Reheat in the oven, microwave, or even an air fryer until your desired heat level.

How long to cook chicken?

Chicken comes in all shapes, sizes, and thicknesses. I didn’t pound mine down at all and it took about 22 minutes at 425F. Do yourself a favor and purchase an instant-read meat thermometer. Check the thickest part of your chicken after 15 minutes and every 5 minutes after that until it reaches 165F internally.

  • 4 sweet potatoes
  • 4 crowns of broccoli
  • 4 chicken breasts
  • 1/2 cup oil peanut or avocado
  • 2 Tablespons rice vinegar
  • 2 Tablespoons brown sugar
  • 1 Tablespoon sesame oil
  • 2 Tablespoons black truffle Chili Crunch
  • 1/3 cup Japanese mayonnaise
  • 1 Tablespoon Hot Honey Chili Crunch
  • 1 teaspoon rice vinegar
  • 2 Tablespoons soy sauce
  • 4 Tablespoons oil divided between veggies
  • 1 teaspoon salt
  • 1/2 teaspoon pepper


  • Make the marinade: in a gallon-sized Ziploc bag combine the chicken breasts, oil, rice vinegar, brown sugar, sesame oil, and black truffle chili crunch. Zip the bag and smoosh all around until evenly coated. Allow to marinate for 20 minutes or overnight in the refrigerator.
    4 chicken breasts, 1/2 cup oil, 2 Tablespons rice vinegar, 2 Tablespoons brown sugar, 1 Tablespoon sesame oil, 2 Tablespoons black truffle Chili Crunch
  • Pre-heat the oven to 425F.
  • Peel the sweet potatoes and diced into 1/2 inch cubes. Cut the broccoli from the crowns, discarding the stems and breaking into florets.
    4 sweet potatoes, 4 Tablespoons oil, 1 teaspoon salt, 1/2 teaspoon pepper
  • To one bowl add the sweet potato, 2 Tablespoons of oil, 1 teaspoon of salt and 1/2 teaspoon of pepper. Mix well.
  • To another bowl add the broccoli florets, 2 Tablespoons olive oil and 2 Tablespoons soy sauce. Mix well.
    4 crowns of broccoli, 2 Tablespoons soy sauce, 4 Tablespoons oil
  • Line a large sheet pan with parchment paper. Spread the sweet potatoes on the sheet pan and bake for 15 minutes.
  • Remove the sheet pan from the oven and push the sweet potatoes to one side. Add the chicken and broccoli to the sheet pan.
  • Return to the oven and bake for another 15-25 minutes depending on the thickness of chicken breasts. Internal temperature should be 165F.
  • While the sheet pan dinner is baking, mix the Japanese mayo, Hot Honey Chili Crunch, and a splash of rice vinegar. Whisk well to loosen and combine. Serve drizzled over individual plates of food.

Note that the recipe cost does seem a bit high but this is also a very filling meal with a generous portion for 8 adults. You can also view this as a week of dinners for 1 person for $31.03.
